Dallas is set to welcome Sauvage, a luxury restaurant opening in late summer 2025 within The Statler hotel. With only 10 seats and a curated tasting menu designed by chefs Casey and Amy La Rue, this exclusive dining destination aims to elevate the culinary landscape. Each meal will consist of 12 to 15 courses, starting at $245, featuring high-end ingredients cooked over a wood-fired grill. As Dallas’ culinary scene continues to grow, Sauvage looks to offer a unique and intimate dining experience unlike any other.
Dallas is preparing for a luxury dining experience with the upcoming opening of Sauvage, a new restaurant located within the Statler hotel. Set to debut in late summer 2025, Sauvage aims to become one of the most exclusive dining destinations in the city, featuring only 10 seats and a highly curated tasting menu.
Founded by husband and wife chef team Casey and Amy La Rue, Sauvage promises an intimate dining experience with a focus on high-end cuisine. Each seating will offer a prix fixe tasting menu consisting of 12 to 15 meticulously prepared courses. The pricing for this exclusive dining experience will start at $245 per person, not including beverages, positioning it as one of the priciest tasting menus in North Texas.
The La Rues are not new to the culinary scene. They currently operate La Rue Doughnuts, a well-received pastry shop situated in Dallas’ Trinity Groves development. Prior to this, they managed Carte Blanche, an upscale restaurant and bakery that received accolades for its gourmet offerings before closing its doors in mid-2024. Carte Blanche was renowned for extravagant dishes such as wild boar belly and foie gras served with smoked peach foam, both of which contributed to its impressive Forbes Five-Star and AAA Five-Diamond awards.
A key feature of Sauvage will be its wood-fired grill, which will be central to the cooking process. Diners will be able to witness the preparation of their meals, which will include sizzling meats and game cooked over an open flame, enhancing the overall culinary experience. The menu is expected to highlight luxurious ingredients like caviar, A5 Wagyu beef, and truffles, reflecting the high standards set by the La Rues.
In addition to the main courses, the restaurant will also offer a selection of unique vegetable dishes and desserts crafted by Amy La Rue, further emphasizing the creative and upscale nature of the dining experience. An eclectic range of beverage pairings—including cocktails and fine wines—will be available at an additional cost, complementing the exquisite flavors of the menu.
Sauvage will be located at 1914 Commerce Street, within The Statler hotel. The establishment is replacing Sfereco, a pizza and meatball shop that closed its doors in 2023. The introduction of Sauvage aligns with The Statler’s goal to attract prominent culinary talent and provide sophisticated dining experiences for both hotel guests and local residents.
The name “Sauvage,” which translates to “wild” in French, reflects the restaurant’s ambition to embrace bold and adventurous flavors while returning to the La Rues’ original vision of creating a small, intimate dining atmosphere. This concept draws inspiration from the couple’s past pop-up events, aiming to deliver a personal and tactile food experience to diners.
As the dining landscape in Dallas continues to evolve, Sauvage is poised to make a significant addition to the city’s culinary scene, providing diners with a unique and elegant experience that prioritizes both quality and creativity in its offerings.
